Description

A creamy and delightful pink pasta perfect for Valentine’s Day.

Ingredients

Scale
  • 12 ounces pasta (fettuccine or spaghetti)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 can (14 ounces) crushed tomatoes
  • 1 cup heavy cream
  • 1 teaspoon sugar
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • ½ cup grated Parmesan cheese
  • Fresh basil, for garnish
  • Optional: Red pepper flakes for heat

Instructions

  1. Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped onion, sautéing until they are soft and fragrant, about 3-4 minutes.
  3. Pour in the crushed tomatoes and stir. Allow the mixture to simmer for about 5 minutes, letting the flavors meld.
  4. Reduce the heat to low, then add the heavy cream, stirring until fully combined. This will give the sauce its beautiful pink color.
  5. Add sugar, Italian seasoning, salt, and pepper to taste. Let the sauce simmer for an additional 5 minutes, stirring occasionally.
  6. Add the drained pasta to the sauce, tossing gently to coat the pasta evenly.
  7. Stir in the grated Parmesan cheese until melted and combined.
  8. If the sauce is too thick, add a splash of pasta water to reach your desired consistency.
  9. Remove from heat and serve hot, garnished with fresh basil and additional Parmesan cheese if desired.

Notes

  • For extra heat, consider adding red pepper flakes when serving.
  • This dish pairs well with a simple green salad.
