- 1 pound boneless, skinless chicken breasts
- 1 cup fresh pineapple, diced
- 3 cups cooked jasmine rice (preferably day-old)
- 1 cup bell peppers, diced (mixed colors)
- 4 green onions, sliced thinly
- 2 cloves garlic, minced
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon sesame oil
- 1 cup peeled shrimp (optional)
Instructions
- Prepare your ingredients by dicing the chicken and chopping the vegetables.
- In a large skillet over medium-high heat, add oil and cook the chicken until golden brown and fully cooked (about 5-7 minutes).
- Add minced garlic and bell peppers; stir-fry for about 2-3 minutes until fragrant.
- Stir in the diced pineapple and jasmine rice, mixing well for an additional 3–4 minutes.
- Pour in soy sauce and sesame oil; continue to stir for another 2 minutes until heated through.
- Fold in sliced green onions just before serving.
Notes
- This dish is best served immediately for the best texture.
- Day-old rice works best as it prevents the dish from becoming mushy.
- Feel free to customize with other vegetables or proteins as desired.
