Description

A delicious and colorful fried rice dish featuring chicken, pineapple, and mixed vegetables.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup fresh pineapple, diced
  • 3 cups cooked jasmine rice (preferably day-old)
  • 1 cup bell peppers, diced (mixed colors)
  • 4 green onions, sliced thinly
  • 2 cloves garlic, minced
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 cup peeled shrimp (optional)

Instructions

  1. Prepare your ingredients by dicing the chicken and chopping the vegetables.
  2. In a large skillet over medium-high heat, add oil and cook the chicken until golden brown and fully cooked (about 5-7 minutes).
  3. Add minced garlic and bell peppers; stir-fry for about 2-3 minutes until fragrant.
  4. Stir in the diced pineapple and jasmine rice, mixing well for an additional 3–4 minutes.
  5. Pour in soy sauce and sesame oil; continue to stir for another 2 minutes until heated through.
  6. Fold in sliced green onions just before serving.

  • Day-old rice works best as it prevents the dish from becoming mushy.
