- 1 ½ cups vegetable oil
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoons cinnamon
- 3 cups peeled and chopped apples
- 1 cup chopped pecans
Instructions
- Preheat your oven to 325°F (163°C). Grease and flour a 9×13-inch baking pan or line with parchment paper.
- In a large mixing bowl, whisk together vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add dry ingredients into the wet mixture. The batter will be thick.
- Fold in the chopped apples and chopped pecans until evenly distributed.
- Spread the batter evenly into your prepared pan.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for at least 20 minutes before slicing and serving.
Notes
- Store any leftovers in an airtight container at room temperature for up to 3 days.
- This cake can also be frozen. Wrap well and store in the freezer for up to 2 months.
