Corned Beef and Vegetables

Description

A delicious slow-cooked corned beef dish with vegetables.


Ingredients

Scale
  • 1 large onion, large dice
  • 6 carrots, peeled, cut in large chunks
  • 4 celery stalks, cut in large chunks
  • 34 pounds corned beef brisket with seasoning packet, drained
  • 4 cups unsalted beef stock
  • 12 ounces lager beer (can use water, more beef stock or even a dark soda like Coke)

Instructions

  1. Place 1 large onion, large dice, 6 carrots, peeled, cut in large chunks and 4 celery stalks, cut in large chunks into the bottom of an 8-quart slow cooker.
  2. Place 3-4 pounds corned beef brisket with seasoning packet, drained on top and sprinkle the seasoning mix over everything.
  3. Pour in 4 cups unsalted beef stock, followed by 12 ounces lager beer.
  4. Cover and cook on low for 8-9 hours (note: cooking on low instead of high for a shorter period of time will give you the most tender meat).
  5. Remove the corned beef from the cooker and leave the liquid in the pot (note: you can discard the vegetables or enjoy them with the corned beef).
  6. Slice and serve with some of the liquid drizzled on top to keep it moist.
