Description

Delicious grilled chicken skewers marinated in a creamy peanut sauce.


Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts (about 34 pieces)
  • 3 cloves fresh garlic, minced
  • 1/2 cup creamy peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 1/4 cup coconut milk
  • 2 tbsp honey

Instructions

  1. In a bowl, mix peanut butter, soy sauce, lime juice, coconut milk, minced garlic, and honey until smooth to create the marinade.
  2. Cut chicken into bite-sized pieces and toss them in the marinade. Let sit for at least 30 minutes to enhance flavor.
  3. Thread marinated chicken onto soaked wooden skewers (or metal skewers).
  4. Preheat grill to medium-high heat (375°F/190°C) and grill skewers for 10-12 minutes, turning occasionally until cooked through (internal temperature should be 165°F/75°C).
  5. For the peanut sauce, boil remaining marinade and mix in additional peanut butter and lime juice until warmed through.
  6. Serve skewers drizzled with warm peanut sauce and garnish with chopped cilantro or crushed peanuts.

  • Using soaked wooden skewers prevents burning on the grill.
