Delicious grilled chicken skewers marinated in a creamy peanut sauce.
Ingredients

- 1 lb boneless, skinless chicken breasts (about 3–4 pieces)
- 3 cloves fresh garlic, minced
- 1/2 cup creamy peanut butter
- 1/4 cup low-sodium soy sauce
- 2 tbsp freshly squeezed lime juice
- 1/4 cup coconut milk
- 2 tbsp honey
Instructions
- In a bowl, mix peanut butter, soy sauce, lime juice, coconut milk, minced garlic, and honey until smooth to create the marinade.
- Cut chicken into bite-sized pieces and toss them in the marinade. Let sit for at least 30 minutes to enhance flavor.
- Thread marinated chicken onto soaked wooden skewers (or metal skewers).
- Preheat grill to medium-high heat (375°F/190°C) and grill skewers for 10-12 minutes, turning occasionally until cooked through (internal temperature should be 165°F/75°C).
- For the peanut sauce, boil remaining marinade and mix in additional peanut butter and lime juice until warmed through.
- Serve skewers drizzled with warm peanut sauce and garnish with chopped cilantro or crushed peanuts.
Notes
- Letting the chicken marinate longer boosts flavor.
- Using soaked wooden skewers prevents burning on the grill.
