- 2 cups fresh raspberries (or thawed frozen raspberries)
- 1/3 cup granulated sugar
- 1 cup heavy whipping cream, cold
- 1 tsp unflavored gelatin powder
- 1 tbsp water
- 1 tsp pure vanilla extract
Instructions
- Puree the raspberries with sugar in a blender until smooth. Strain through a fine mesh sieve to remove seeds.
- In a small bowl, sprinkle gelatin over water and let bloom for 5 minutes. Gently heat until dissolved.
- Whip the cold heavy cream in another bowl until soft peaks form.
- Fold the raspberry puree and dissolved gelatin into the whipped cream gently.
- Spoon into serving glasses and refrigerate for at least 2 hours until set.
- Garnish with fresh raspberries or whipped cream before serving.
Notes
- This dessert can be served in individual glasses for a nice presentation.
- Make sure to use cold heavy cream for the best results.
- Try adding a splash of lemon juice to the raspberry puree for an extra zing.
