A deliciously creamy soup made with marinara sauce and cottage cheese, perfect for a comforting meal.
Ingredients

- 1 (24-oz) jar marinara sauce
- 1 cup low-sodium chicken broth
- 1½ cups cottage cheese
- 1 Tbsp olive oil
- 2 cloves garlic (crushed)
- 1 Tbsp Italian seasoning
- salt and pepper (to taste)
- 3 Tbsp fresh basil
- ¼ tsp red pepper flakes (or to taste)
Instructions
- Heat olive oil over medium heat in a Dutch oven or large pot. Add garlic and cook until fragrant.
- Add marinara sauce, Italian seasoning, chicken broth, salt, and black pepper to the pot and bring to a boil.
- Reduce to medium-low heat and simmer for 25 minutes, until hot.
- Add cottage cheese to the pot and use an immersion blender to blend the soup until smooth.
- Stir in fresh basil leaves and add a dash of red pepper flakes.
Notes
- This soup can be served with crusty bread for dipping.
- Adjust the spice level by adding more or less red pepper flakes.
