Description
A refreshing salad made with grated carrots and parsley, dressed in a zesty olive oil and lemon dressing.
Ingredients

- 4 large fresh carrots, peeled and grated
- 1/2 cup fresh flat-leaf parsley, finely chopped
- 6 tablespoons extra virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
- Salt and pepper, to taste
- 1/4 teaspoon ground cumin
Instructions
- Grate the carrots using a box grater or food processor.
- In a bowl, whisk together olive oil, lemon juice, salt, pepper, and cumin until smooth.
- In a large mixing bowl, combine grated carrots with chopped parsley. Drizzle dressing over the salad and toss well.
- Chill in the refrigerator for at least 30 minutes to allow flavors to meld.
- Serve in a lovely dish garnished with extra parsley if desired.
Notes
- This salad can be made a few hours in advance for best flavor.
- Feel free to add other ingredients like nuts or seeds for added texture.
