Description

This creamy rice pudding is a comforting dessert made with short grain rice, milk, and a touch of cinnamon.


Ingredients

Scale
  • 1 cup short grain rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup raisins (optional)

Instructions

  1. Rinse the rice under cold water until mostly clear then set aside to remove excess starch.
  2. In a heavy saucepan add rice and 3 cups milk then cook over medium heat while stirring often to prevent sticking.
  3. Once steaming reduce heat to low and simmer for 20 minutes stirring regularly until rice softens.
  4. Add sugar and salt then slowly stir in remaining milk to control thickness and cook 10 more minutes.
  5. Remove from heat then stir in butter, vanilla, cinnamon, and raisins if using, then rest for 5 minutes before serving.

Notes

  • For a richer flavor, use whole milk instead of low-fat milk.
  • Feel free to add nuts or other dried fruits for variation.
