Description

A delicious and customizable taco bowl made with baked russet potatoes and a variety of toppings.


Ingredients

  • 4 russet potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup sour cream
  • 2 diced tomatoes
  • 3 green onions, sliced
  • 1 cup Greek yogurt
  • 1 fresh avocado, diced
  • 1 can black beans, rinsed and drained
  • 1 can pinto beans, rinsed and drained
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and dry the russet potatoes, then pierce them several times with a fork. Rub them with olive oil and sprinkle with salt. Bake them directly on the oven rack for about 45-60 minutes, or until they are tender inside.
  2. While the potatoes are baking, heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon. Drain any excess fat. Stir in your taco seasoning and a splash of water, cooking until the mixture is well combined and heated through, about 5-7 minutes.
  3. While the beef is cooking, chop your toppings. Dice the tomatoes, slice the green onions, and prepare any other toppings you like, such as shredded cheese or avocado.
  4. Once the potatoes are done, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise, then use a fork to fluff the insides. Top each potato half with the seasoned beef, beans, and your choice of toppings.
  5. Serve the loaded potato taco bowls warm, and let everyone customize their bowls with additional toppings like salsa, jalapeños, or cilantro!
