Description

This sourdough eggnog bread is a delightful festive treat combining the tangy flavor of sourdough with the rich taste of eggnog.


Ingredients

Scale
  • 100 g sourdough starter
  • 250 g eggnog
  • 350 g all-purpose flour
  • 1 large egg
  • 40 g granulated sugar
  • 30 g unsalted butter, softened
  • 5 g salt
  • 1/2 tsp ground nutmeg
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, mix the sourdough starter, eggnog, flour, egg, sugar, salt, nutmeg, and vanilla until a sticky dough forms. Rest for 30 minutes.
  2. Add softened butter and knead the dough until smooth and elastic (8–10 minutes).
  3. Cover and bulk ferment at room temperature for 4–6 hours, doing 3 stretch-and-folds every 30 minutes for the first 90 minutes.
  4. Shape into a ball or place in a loaf pan once doubled in size.
  5. Cover and cold-proof in the refrigerator for 8–12 hours.
  6. Preheat oven to 375°F (190°C). Bake covered for 20 minutes, then uncovered for 20–25 minutes until golden and sounds hollow.
